INDIAN RECIPE: Cauliflower Pickle

Ingredients for Cauliflower Pickle:

  • 1 large head cauliflower, cut in florets
  • 50 gm shallots
  • ¼ cup salt
  • ¾ cup sugar
  • 1 tsp turmeric powder
  • 2 tsp mustard seeds, powdered
  • 2 tsp red chilli powder
  • 4 cloves
  • 1 cup white vinegar
  • 1 cup water

Directions for making Cauliflower Pickle:

  1. Mix onions, cauliflower and salt and let stand overnight.
  2. Drain and rinse in cold water.
  3. Combine sugar, turmeric, mustard seed, cloves and chillies in a har.
  4. Stir in the vinegar and water.
  5. Add the cauliflower and shallots. Stir well.
  6. Let stand for two days.
  7. Refrigerate to store.
