Ingredients for Saffron Rice:

  • 1 ½ cup long grain rice
  • 2 tbsp vegetable oil
  • 1 (3 inch) cinnamon stick
  • 7 whole cloves
  • 5 cardamom pods (optional)
  • 1 tsp salt
  • ¼ tsp crumbled saffron
  • 2 tsp milk
  • 2 ¾ cup water

Directions for making Saffron Rice:

  1. Rinse rice.
  2. In a saucepan, heat oil.
  3. Add cinnamon, cloves and cardamom pods.
  4. Fry the spices, stirring for 30 seconds.
  5. Add rice, stir for a minute.
  6. Add water and salt, bring to boil.
  7. Cover and cook over low heat for 15 minutes.
  8. Add milk to saffron and cook until hot, dribble over rice and continue to cook rice for 5 minutes.
  9. Remove from heat. Let stand for 5 minutes.
