Serves 4
Preparation time: 45 minutes
Cooking time: 7 to 10 minutes

Ingredients for Khandvi:

  • 1 ¼ cup gram flour, sieved
  • 2 ½ cups yogurt, whisked
  • 2 lemons
  • 1 tsp green chilli paste
  • 1 ½ tsp ginger paste
  • 1 tbsp salt
  • A pinch of turmeric powder
  • 2 ½ cups water
  • 4 tsp oil
  • 4 tsp mustard seeds
  • 4 2/3 tbsp cucumber, chopped
  • 2 2/3 tbsp capsicum, chopped
  • 4 tsp green coriander, chopped
  • ½ cup coconut, grated

Directions for making Khandvi:

  1. To the yogurt, add juice of 2 lemons, green chilli paste, ginger paste, salt, turmeric powder and gram flour, whisk well to break all lumps. Mix in water and whisk again.
  2. Cook the mixture till it is of quite thick consistency, stirring continuously to prevent it from sticking to the bottom.
  3. Oil a smooth surface, pour the mixture and spread evenly to a thickness of 1 mm. Leave it to cool.
  4. Heat oil, sauté mustard seeds till they crackle. Add cucumber, capsicum, coriander and coconut. Toss for a while till vegetables and coconut are cooked but still slightly crunchy. Sprinkle this over the cooked gramflour sheet.
  5. Cut the sheet into 1 1/2” strips. Roll each strip tightly, place on a platter and serve hot, garnished with chopped coriander and accompanied by Mint chutney
  6. Enjoy your Khandvi. Hope you love this Indian recipe.
