INDIAN RECIPE: Indian Lentil Soup

Serves 4-6

Ingredients for Lentil Soup:

  • 1 cup masoor (orange lentil)
  • 2 onions, finely chopped
  • 4 tomatoes, blanched, peel and pureed
  • 7 shallots
  • 5 tbsp ghee or clarified butter
  • 2 cloves garlic, minced
  • 5 red chillies, finely chopped
  • ½ tsp cumin seeds
  • 1 tsp coriander seeds
  • ½ cup parsley
  • Salt to taste

Directions for making Lentil Soup:

  1. Clean, wash and pressure cook masoor in 4 cups of salted water.
  2. Add shallots and simmer for 5 minutes.
  3. Heat ghee/butter in saucepan, fry onions for 3 minutes, then add ginger, garlic, cumin, chillies and coriander and fry for further 3 minutes.
  4. Transfer fried mixture to lentil mixture.
  5. Pour in tomato puree and simmer for 10 minutes.
  6. Serve in soup bowls garnished with parsley.
