Ingredients for Cottage Cheese in a Pickled Curry:
- 1 kg cottage cheese (paneer), cubed
- ½ cup olive/mustard oil
- 10 cloves
- 10 green cardamoms
- 1 ½ tsp mustard seeds
- 1 2/3 tsp fenugreek seeds
- 16 red chillies, whole
- 1 tsp black cumin
- 1 cup onions, chopped fine
- 4 tbsp ginger paste
- 4 tbsp garlic paste
- 2 tsp red chilli powder
- 2 tsp turmeric powder
- A pinch asafetida
- 1 ½ cups yogurt, whisked
- Salt to taste
- 1 ½ tsp black pepper, crushed
- 2 tsp sugar
- 6 garlic cloves, whole
- 4 tsp lemon juice
- 2 tsp green coriander, chopped
Directions for making Cottage Cheese in a Pickled Curry:
- Heat oil till it is smoking, lightly stir fry cloves, cardamoms, mustard seeds, fenugreek seeds, whole red chillies and cumin seeds. Lower the heat.
- Add onions and brown over medium heat. Stir in ginger-garlic pastes, red chilli powder, turmeric powder and asafetida, cook for 3-4 minutes. Add yogurt, bring to a boil, simmer until the oil separates. Add cottage cheese cubes, salt, pepper, sugar, garlic, cloves and lemon juice, cook for 2-3 minutes.
- Serve hot, garnished with green coriander.
